Pop Tart Cookie Cups

minutesThese pop tart cookie cups have a strawberry filling and icing on top that remind me of that strawberry pop tart I ate growing up! I find these easier than pop tart bars, with less steps and softer. They are bite size and only take 10 minutes to bake.
Ingredients
- Cookie:
* 8 tbsp unsalted butter, softened
* 1/3 cup granulated sugar
* 1/4 cup light brown sugar
* 1 large egg, room temp
* 1 1/2 tsp vanilla extract
* 1 1/2 cup flour
* 1 tsp baking powder
* 1/2 tsp salt
* 1/3 cup strawberry preserves- Icing:
* 1/2 cup powder sugar
* 2 tbsp heavy cream
* 1/8 cup rainbow sprinkles
Directions
- Preheat oven to 350°F. Grease 20 cups of a mini muffin pan.
- In a mixing bowl beat butter and sugars. Add in egg and vanilla extract. Beat in flour, salt and baking powder till combine.
- Using a small ice-cream scoop roll balls and place into baking cups. Press down with back of a teaspoon. Bake for 10 minutes. Let cool for 5 minutes and pipe strawberry jam into cookie cup.
- Let them cool for 10 additional minutes and remove from mini muffin pan. Make icing by combining powder sugar and heavy cream. Pipe on icing and sprinkle! Enjoy.
