    * 3 tbsp unsalted butter
    * 3 apples red or green, diced
    * 1/3 cup brown sugar
    * 2 tsp cinnamon
    * 1 tsp vanilla extract
    * 1 egg, beat for egg wash
    * Sprinkle Turbinado sugar

  • Icing:
  • * 1/2 cup powder sugar
    * 2-3 tbsp heavy cream

Directions

  • Preheat oven to 400° F. In a median saucepan on medium heat, melt butter, add in diced apples. Let simmer for 1 minute. Add in brown sugar, cinnamon and vanilla extract and stir till apples soften, a couple minutes.
  • Roll out both sheets of puff pastry. Cut both in half this recipe makes two strudels. Place in cookie sheet with parchment paper.
  • Take 1 cup of diced apples and spread evenly on one bottom layer of pastry, leaving a 1” inch edge. Place other half layer of puff pastry on top of bottom layer. Fork around the edges, brush with egg wash and cut slits on top of puff pastry. Sprinkle sugar on top. Repeat for other puff pastry sheet. Bake both for 15 minutes or till golden brown.
  • Optional drizzle icing. You can buy or mix 1/2 cup powder sugar with two tablespoon of heavy cream and drizzle. Enjoy!
