- Banana Chocolate Chip Brown Sugar Muffins
12 tbsp unsalted butter, melted
1/4 cup sugar
1/2 cup light brown sugar
1 tsp vanilla extract
2 eggs
3 ripe bananas, mashed
1 3/4 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/4 cup @nestltollhouse semi-sweet chocolate chips- Brown Sugar Topping
1/4 light brown sugar
1/2 cup flour
4 tbsp unsalted butter, melted
Directions
- Preheat Oven 350F. Grease a muffin/cupcake pan well. We did not use cupcake liners.
In a large bowl combine, 12 tablespoons of melted butter (stick and a half), sugars, and vanilla extract together. Mix for about a minute or so. - Add in the eggs and the mashed bananas and continue to mix for another two minutes, till combined.
In a separate bowl, combine flour, salt and baking soda. Whisk together. - Mix dry ingredients into wet ingredients and mix for another two minutes till combined.
- Slowly mix in 1 cup of the chocolate chips! Save the other 1/4 cup of the chocolate chips for the tops of the muffins. We sprinkle a few on the top of the batter prior to baking and then save the rest when they are half way done baking.
- In a side bowl mix together your brown sugar topping ingredients and set aside.
- Scoop muffin batter with a spoon or we use a ice cream scooper, filling each cup almost to the top. Top off with a few chocolate chips.
- Bake for 15 minutes. At 7 minutes pull out muffins and add remaining chocolate chips and brown sugar topping! Let muffins finish baking.
