Ingredients
- Chocolate Chip Banana Bars:
* 8 tbsp unsalted butter, softened
* 1 cup light brown sugar
* 1 egg, room temp
* 2 tsp vanilla extract
* 1 cup all-purpose flour
* 1/2 tsp salt
* 3 small overripe banana, mashed
* 1 cup mini chocolate chips- Caramel Butter Cream:
* 8 tbsp unsalted butter, softened
* 3 1/2 cup powder sugar
* 4 tbsp caramel sauce
* 1-2 tbsp heavy cream
* 1 tsp vanilla extract
* 1/8 cup mini chocolate chips, topping
Directions
- Preheat oven to 350°F. Grease a 8×8 baking dish, lined with parchment paper. In a mixing bowl beat butter and brown sugar till smooth. About three minutes.
- Add in eggs and vanilla extract. Mix flour and salt in a small bowl. Add to wet ingredients and beat together till combined. Mash 2 1/2 bananas and set the remaining one half of the banana aside. Fold in bananas to mixture till fully combine. Fold in chocolate chips saving a handful to sprinkle on top of batter.
- Pour banana mix in prepared baking dish, sprinkle remaining chocolate chips on top and bake for 30-35 minutes.
- Remove for oven and let cool for 15 minutes. Flip onto a cooling rack. Make frosting by beating butter till smooth. Add in powder sugar, caramel, heavy cream and vanilla extract and beat till smooth. About three-five minutes. Slice squares and pipe frosting onto cool squares and top off with mini chocolate chips. Enjoy!
