Banana Crumb Cake

minutesThis crumb cake is so moist and it’s pretty quick to whip up! I made it before going home to see my family. It’s perfect for breakfast or an afternoon snack. It takes about 40-45 minutes to bake and I love eating it warm! Full recipe below
Ingredients
- Cake:
* 4 ripe bananas, mashed
* 2 cups flour
* 3 tsp baking powder
* 1 1/2 tsp ground cinnamon
* 1/2 tsp salt
* 1 stick unsalted butter
* 1 cup granulated sugar
* 2 large eggs
* 1 1/2t tsp vanilla @singingdogvanilla
* 1 cup milk, we used whole milk- Crumb:
* 2/3 cup flour
* 2/3 cup brown sugar
* 1/3 cup sugar
* 1 1/2 tsp cinnamon
* 6 tbsp unsalted butter, softened- Icing:
* 1/2 cup powder sugar
* 2-3 tbsp milk
Directions
- Preheat oven to 350° F. Grease sides of a 9×9 baking dish. Place parchment paper on the bottom and grease as well.
- Mash 4 bananas in a medium bowl and set side. Combine dry ingredients in one bowl and set aside.
- Using a stand mixer or hand held mixer beat butter for a couple minutes till fluffy. Add in sugar and continue to beat till combine. Add in eggs and vanilla extract. Add in mashed bananas. Slowly add in dry ingredients and milk alternating a little at a time till it’s fully combine.
- Make crumb by combining all ingredients and forking in the the softened butter. Pour half the batter in the dish and add a layer of crumb. Add rest of batter and smooth out with spatula. Add remaining crumb on top. Bake for 40-45 minutes till golden brown and toothpick comes out clean! Let cool for 10-15 minutes. Combine icing ingredients in a small bowl. Drizzle over cake, cut and enjoy!
