Banana Pecan French Toast

Ingredients

  • Egg Wash
  • 5 eggs

  • 2 tbsp cinnamon

  • 1 tbsp brown sugar

  • 1/4 cup milk

  • 1 tsp banana extract

  • Filling
  • 2 1/2 Lg bananas

  • 8 oz cream, optional if you would like a spread

  • 2 tbsp brown sugar

  • Bread and Topping
  • 10 slices bread, we used honey wheat

  • 1 handful of pecans crumbled

  • 2 tbsp brown sugar

  • 2 tbsp unsalted butter, melted

  • 1 tsp cinnamon sugar

Directions

  • Mix egg wash ingredients together in a small bowl, set aside.
  • In a medium bowl, mash 1 1/2 banana, combining with cream cheese and brown sugar. Set aside. This can be put in a side cup to spread on to the french toast while you eat or you may spread on as you stack your toast and bananas. Put in Fridge for 15-20 minutes to cool.
  • While spread is chilling, start to dunk the bread into the egg wash mixture. In a medium skillet or saucepan on medium heat, place 2 slices of bread and cook for 60 seconds on each side or until golden brown.
  • While you cook the french toast slice up remaining banana into thin slices to layer onto the toast. 6 slices a layer. Stack toast and banana till complete with bread slices.
  • Crush pecans into the saucepan on medium heat with brown sugar and melted butter, cook for 2-3 minutes to top off the banana french toast with. These are so yummy. Sprinkle with cinnamon sugar, done!
