Ingredients

  • 4 Lg eggs

  • 1/2 cup sugar

  • 3 tbsp all-purpose flour

  • 1/8 tsp salt

  • 1/2 tsp vanilla extract

  • 2 cups whole milk

  • 1/2 box of mini vanilla wafers

  • 2 ripe bananas

Directions

  • Separate the yolks from the whites of 3 eggs. Set aside the whites (this can be used if you’d like to make a meringue, link in notes for the recipe).
  • Add remaining whole egg to the yolks. Whisk together sugar, flour, and salt. Stir in egg yolks and whole egg.
  • In a saucepan pour the egg mixture. Make sure to stir the egg mixture a few times prior to turning on the stove (medium heat).
  • Add Milk to mixture and stir frequently (about 10-12 minutes) till the pudding thickens. Remove from heat and stir in vanilla extract to pudding.
  • Layer the bottom of the mason jars with a handful of mini wafers as your base. On top of the wafers place a few slices of bananas. Scoop a hearty spoonful of the homemade pudding on top of the bananas. Continue to layer in this order. On top of the last scoop of pudding we crush some wafers for taste and decoration!
