Banana Pudding Donuts

- Cinnamon Sugar Donuts
2 cups all-purpose flour
1 1/2 cups sugar
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 Lg egg
1 1/4 cups whole milk
2 tbsp unsalted butter, melted
1 tsp pure vanilla extract- Cinnamon Sugar Topping
6 tbsp unsalted butter, melted
1/2 cup sugar
2 tsp ground cinnamon- Banana Pudding
4 Lg eggs (3 eggs whites set aside for the Meringue)
3/4 cup sugar (1/4 reserved for Meringue)
3 tbsp all-purpose flour
1/8 tsp salt
1/2 tsp vanilla extract
2 cups whole milk
1/2 box of mini vanilla wafers
2 ripe bananas
Directions
- Donuts- Preheat the oven to 350 degrees. Grease donut pans. Into a large bowl, sift together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a small bowl, whisk together the egg, milk, melted butter, and vanilla. Stir the wet mixture into the dry ingredients until just combined. We use a stand mixer for the donuts but you do not have to. Pipe the batter into the baking pans, filling each one a little more than three-quarters full. Bake for 12 minutes, until donuts rise and are not wet on top. Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan. For the topping, melt the 6 tbsp of butter into a dish big enough to dunk your donut in. Combine the sugar and cinnamon in a small bowl. Dip each donut first in the butter and then in the cinnamon sugar, we dunk both sides!
- Banana Pudding- Separate the yolks from the whites of 3 eggs. Set aside the whites, this can be used if you’d like to make a meringue. Add remaining whole egg to the yolks. Whisk together sugar, flour, and salt. Stir in egg yolks and whole egg. In a saucepan pour the egg mixture. Make sure to stir the egg mixture a few times prior to turning on the stove (medium heat). Add Milk to mixture and stir frequently (about 10-12 minutes) till the pudding thickens. Remove from heat and stir in vanilla extract to pudding. Layer the bottom of the mason jars with a handful of mini wafers as your base. On top of the wafers place a few slices of bananas. Scoop a hearty spoonful of the homemade pudding on top of the bananas. Continue to layer in this order. To make the meringue, take the reserved egg whites with a pinch of salt and beat in the remaining 1/4 cup sugar on high speed in a mixer. Beat until whites will not slide out of the mixing bowl or till a light fluffy texture is formed (about 8 minutes). Layer meringue on top of the pudding cups!
- Banana Pudding Donuts- As you can see I had fun and made a banana pudding donut! Stack two cinnamon sugar donuts and spread a layer of pudding on top of the donuts. Chop up 3-4 slices of bananas and layer them on top of the pudding. Crush wafers on top of the donut for texture and crunch! Finish it off with a dollop of meringue! Enjoy 🙂
