Banana Pudding No Bake Cheesecake

This cheesecake is layered with the best things! Vanilla wafers, bananas, pudding, whipped cream-cheese and cool whip! Made it twice this month and both times people were asking for more.
Ingredients
- Crust layer:
* 1 box vanilla wafers, crushed, divided
* 1 stick unsalted butter, melted- Cheesecake layer:
* 2, 8 oz. cream cheese, softened
* 1/3 cup sugar
* 3 tbsp heavy cream
* 1/2 tsp vanilla extract- Pudding layer:
* 1, 3.4 oz. box Banana Cream or Vanilla Instant Pudding mix
* 1 cup cold milk + 2-3 tbsp- Banana layer:
* 4 bananas, sliced
- Topping layer:
* 8 oz. Cool whip, defrosted
* 1/8 cup vanilla wafers, crushed divided from the crust layer
* Optional, Whip-cream for decoration
Directions
- Slice 4 small bananas and set aside. Defrost cool whip to room temp if in freezer. Crush vanilla wafers in a blender. Put aside 1/8 cup of crushed wafers. With remaining crushed wafers add melted butter and combine. Crust will be thick and buttery. Press crust down on the bottom of a lightly greased 9” springform pan. Put in fridge.
- While crust is in fridge beat cream cheese using a hand held or stand mixer till soft. Add sugar, heavy cream and vanilla extract, beat till smooth. Set aside
- Make pudding mix, do not follow box instructions. Combine pudding mix and 1 cup of cold milk. We add an additional 2-3 tbsp of cold milk depending on consistency. Pudding will be thicker but smooth.
- Take crust out of fridge and add cream cheese layer on top of the crust. Spreading with a spatula. Add pudding layer and smooth out. Add sliced bananas. Add cool whip layer. Sprinkle the remaining crushed vanilla wafers on top. Put in fridge to set in 2-3 hrs. We take ours out at about 2.5 hrs. Remove from fridge and decorate with whip cream. Enjoy!
