Easy Carrot Snack Cake

minutesHey y’all this carrot cake is simple to make and very quick! I use two 9×9 baking dishes and it only takes about 20 minutes to bake! I am not a huge raisin fan but you can add as desired. Oh and a moment for the frosting!
Ingredients
- Carrot Cake:
* 2 cups all-purpose flour
* 2 tsp baking soda
* 1/2 tsp salt
* 2 tsp cinnamon
* 1 cup granulated sugar
* 1 cup dark brown sugar
* 1 1/4 cup vegetable oil
* 1 1/2 tsp vanilla extract
* 4 eggs, room temp
* 3 cups peeled carrots, 5 medium carrots
* 3/4 cup chopped pecans- Cinnamon Cream Cheese Frosting:
* 16 oz. Cream cheese, softened
* 8 tbsp unsalted butter, softened
* 4 cup powder sugar
* 1 1/2 tsp cinnamon
* 1 1/2 tsp vanilla extract
* 2 tbsp heavy cream
Directions
- Preheat oven to 350° F. Grease two 9×9 baking dishes, lined with parchment paper.
- Combine flour, baking soda, cinnamon and salt in a small bowl and set aside. Whisk together sugars and oil. Add vanilla extract and eggs and whisk till combined.
- Fold in flour mixture one cup at a time. Mix in grated carrots and chopped pecans.
- Pour half of the mixture in each prepared baking dishes. Bake for 20-22 minutes.
- Make frosting while cakes cools. Beat cream cheese and butter till smooth. Add in powder sugar, vanilla extract and heavy cream. Frost cake and sprinkle crushed pecans on top! Enjoy.
