Chocolate Chip Pumpkin Donut Loaf

minutesThis Pumpkin Donut loaf is so moist, and the chocolate chip morsels make it even better! This batter is versatile so you can make 12 muffins with it, a loaf or even 12 baked donuts. Bake times for donuts or muffins are in the note section at the bottom of the full recipe. Give it a try!
Ingredients
- Pumpkin Batter:
* 2 cups flour
* 1 1/2 cup sugar
* 2 tsp pumpkin pie spice
* 2 tsp baking powder
* 1/4 tsp salt
* 2 cups pumpkin puree
* 3 eggs
* 2 tsp vanilla extract @singingdogvanilla
* 1/2 cup, unsalted butter, melted
* 2 tbsp vegetable oil
* 3/4 cup chocolate chips, separated
Directions
- Preheat Oven to 350 degrees F. Combine in a medium bowl dry ingredients, whisk together and set aside.
- In a medium bowl combine wet ingredients and whisk together. Add dry ingredients to wet ingredients and mix till smooth.
- Fold in 1/2 cup of chocolate chips. Leaving 1/4 cup to sprinkle on top. Pour batter into a greased 9×5″ loaf pan and sprinkle remaining chocolate chips on top.
- Bake for 45-50 minutes till knife comes out clean. Let cool for 5 minutes and run a knife around the edges of the loaf pan. Let cool for 15 more minutes and flip onto a cooling rack. Slice and enjoy.
Notes
- If you are making donuts or muffins here are the bake times at 350 degrees F. Donuts = 12-15 minutes to bake. Muffins = 20-22 minutes to bake.
