Christmas Tree Spiced Olive Oil Cake

This spiced cake is frosted with a maple molasses buttercream! Decorated with a Christmas tree on top which is optional. The cake takes only 30 minutes to bake and is made with our favorite Botticelli Baking Olive Oil. It is super moist.

Ingredients

  • Spice Cake:
  • Dry:
    * 1 1/3 cup flour
    * 1 tsp baking powder
    * 1/2 tsp baking soda
    * 1 1/2 tsp ground cinnamon
    * 1/2 tsp ground nutmeg
    Wet:
    * 1/2 cup granulated sugar
    * 1/4 cup brown sugar
    * 2 eggs, room temp
    * 1/4 cupĀ @botticellifoodsĀ baking olive oil
    * 1/2 cup applesauce
    * 1/2 cup buttermilk, room temp
    * 1 tsp vanilla extract

  • Frosting:
  • * 3 sticks unsalted butter, room temp (24 tbsp)
    * 4 to 4 1/2 cup powder sugar
    * 1/4 cup maple syrup
    * 1 tbsp heavy cream
    * 2 tsp molasses, optional
    * Optional Sprinkles: I use white, gold and silver pearl sugar candy sprinkles

Directions

  • Preheat oven to 350Ā°F. Combine all dry ingredients in a medium bowl. Set aside.
  • Combine all wet ingredients in a bowl. Pour wet ingredients into dry ingredients. Whisk together. Pour cake batter into a prepared 8Ɨ8 baking dish, greased parchment paper. Bake for 30-35 minutes. Remove from oven and let cool.
  • Pop cake out on cooling rack after 15 min of cooling in baking dish and continue to cool. Make Frosting by beating butter till fluffy. Add powder sugar, maple syrup, vanilla extract, molasses and heavy cream and beat till smooth.
  • Frost cake with a thick layer of frosting. Optional to make the Christmas tree but I use a large star tip and make shells starting from the bottom of the base of the cake. You can also just do piping of stars from the bottom up. Be creative. Sprinkle on sprinkles of choice. Slice and enjoy.
