These cinnamon roll cookies are my favorite, they are soft and the chunks of the melted cinnamon are delicious! They only take 15 minutes to bake, take out of the oven ice and enjoy! I love eating them warm.

Ingredients

  • Filling:
  • * 8 tbsp unsalted butter, softened
    * 1 cup dark brown sugar
    * 2 tbsp cinnamon

  • Cookie Dough:
  • * 16 tbsp unsalted butter, softened
    * 1 1/2 cup granulated sugar
    * 2 eggs
    * 1 1/2 tsp vanilla extract
    * 3 cups all-purpose flour
    * 1 tsp baking soda
    * 1 tsp cream of tartar
    * 1/2 tsp salt

  • Icing:
  • * 1/2 cup powder sugar
    * 2-3 tbsp heavy cream

Directions

  • Preheat oven to 350°F. Make filling by beating butter till smooth in a stand in mixer. Add brown sugar and cinnamon and continue to beat till smooth. Make small balls from mixture and put in a parchment paper 9×9 baking dish. Place dish in the freezer for 30 minutes for balls to harden.
  • While cinnamon balls are freezing make cookie dough. Beat butter for two minutes till smooth. Add in sugar, eggs and vanilla extract and combine till smooth.
  • Combine all dry ingredients in a medium bowl and add a cup of flour mixture at a time to the wet mixture and beat till combine. Remove cinnamon balls from freezer and fold into dough with a spatula.
  • Using medium ice-cream scoop, scoop cookie dough onto a baking sheet and roll into balls. Put rolled cookies in freezer for 15 minutes. Bake for 15-18 minutes. Flatten cookie down with a back of a measuring cup 10 minutes into baking. Use a mug or round cookie cutter right when they finish baking to make them perfectly round. This will make 18-20 medium size cookies. Make icing by combing ingredients and drizzle onto cookie.
