Happy (one day late) Birthday to me! I decided to make my own bday cake and I wasn’t going to originally post it because I didn’t think it came out perfect but friendly reminder things do not need to be perfect looking all the time (my husband devoured it)😋 Inspiration for this cake came from my friends daughter, thank you💕

Ingredients

  • Cake:

  • * 8 tbsp unsalted butter, softened
    * 3 cups granulated sugar
    * 1 cup vegetable oil
    * 3 tsp vanilla extract
    * 4 cups all purpose flour
    * 4 tsp baking powder
    * 1/2 tsp salt
    * 1 1/3 cup whole milk
    * 8 egg whites room temp
    * 1 cup rainbow sprinkles, separated

  • Vanilla Butter Cream Frosting:

  • * 3 sticks unsalted butter, softened
    * 6 cups powder sugar
    * 3 tsp vanilla extract
    * 5-6 tbsp milk or heavy whipping cream

Directions

  • Preheat oven to 350 degrees F. In a stand in mixing bowl beat together butter till fluffy, 2 minutes. Add in sugar and beat till smooth. Add in vegetable oil and vanilla extract and combine.
  • In a separate bowl mix together dry ingredients. Slowly add 1 cup of flour into wet ingredients at a time, alternating pouring in the milk. Mix till smooth.
  • Beat egg whites with an electric mixer till stiff peaks form. Fold into batter with half the sprinkles. Set other half of sprinkles aside. We used two 6” pans and also made cupcakes. For just the cake use three 6” pans or two 9” pans. Bake for 35-40 minutes till toothpick comes out clean. Let cakes cool for 10 minutes and pop on to cooling rack to cool fully and make frosting.
  • Make frosting by using a stand-in mixer, beating the butter till it is soft and fluffy. About 2 minutes. Add powder sugar and combine. Add in vanilla extract and milk and whip till smooth. Once cake is completely cool (about 60 minutes) frost and pipe cake. Add remaining sprinkles to top-center of the cake.

Notes

  • If you are making the two 6″ cakes and cupcakes. It will bake 12 cupcakes with the cake. Cupcakes about 18-20 minutes.
