Frosted Pumpkin Cookies

minutesThese pumpkin cookies are so easy to make and chewy! You will think you’re eating a pumpkin pie! The spiced frosting is optional but adds a nice touch. Full recipe below.
Ingredients
- Pumpkin Cookies
* 1 1/2 stick unsalted butter, softened
* 3/4 cup light brown sugar, packed
* 2 egg yolks, room temp
* 1 1/2 tsp vanilla
* 1/2 cup canned pumpkin puree
* 1 3/4 cups all purpose flour
* 1 tsp cinnamon
* 1/2 tsp nutmeg
* 1/4 tsp ground ginger
* 1/4 tsp ground cloves
* 1/2 tsp baking powder
* 1/2 tsp baking soda
* 1/4 tsp salt- Sugar topping:
* 1/2 cup granulated sugar
* 1 tsp cinnamon
* 1/2 tsp nutmeg- Spiced Frosting:
* 2 sticks unsalted butter, softened
* 3-4 cups powder sugar
* 1 tsp cinnamon
* 1/2 tsp nutmeg
* 2 tbsp milk
Directions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- Combine butter and brown sugar and beat till smooth. Add in eggs and vanilla extract. Beat for another minute. Add in pumpkin purée and continue to mix till combine.
- Combine all dry ingredients in a bowl and slowly add to wet mixture. Beat till combine and cookie dough forms. Put in fridge for 10-15 minutes to chill.
- Combine sugar topping in a small bowl. Using an ice-cream scooper, scoop out dough onto parchment paper and roll into ball. Roll ball into sugar, place back on baking sheet. Bake for 10-12 min. About 6 minutes in press cookie down using a back of a spoon or measuring cup. Let back for the remaining time.
- Take out to cool on cooling rack and make frosting. Beat butter till fluffy, add in powder sugar, all spices and a splash of milk. Frost cooled cookies and sprinkle some more sugar on top!
