- Nilla Wafer Crust
· 1 cup vanilla Nilla wafers
· 2 tbsp unsalted butter, melted
· 1 tbsp sugar
· 1/4 tsp cinnamon
· 1/4 tsp nutmeg- Holiday-nog Cheesecake
· 14 oz cream cheese, room temperature
· 1/2 cup sugar
· 3/4 cup eggnog, we used low fat holiday-nog
· 2 tbsp all-purpose flour
· 1 tsp vanilla extract
· 1/4 tsp nutmeg
· 1/4 tsp cinnamon
· 1/8 tsp salt
· 1 large egg- Whip Cream
· 1 cup heavy cream
· 1 tbsp powder sugar
· 1 tsp vanilla extract
Directions
- Preheat oven to 325°F. Fill cupcake pan with paper liners.
- Crush Nilla wafers, with cinnamon, nutmeg and sugar in a large bowl or use hand mixer or food processor, combine melted butter till crumbs are wet.
- Divide evenly in cupcake holders. Firmly press down to create and even crust. Bake for 12 minutes. Then transfer to refrigerator to cool.
- In a large bowl or stand mixer, beat together sugar and cream cheese. Add holiday-nog, flour, vanilla, cinnamon, nutmeg, and salt. Mix well and add egg. Fill cavities a little more than halfway. Bake for 20 minutes or until centers are only slightly jiggly.
- Remove to a cooling rack to cool for about 30-45 minutes. Transfer to refrigerator to chill for 3-4 hours. We made homemade whip cream (just whip all the ingredients together in a stand mixer for appx. 3-5 minutes, till you have soft peaks), but you can also use store bought! Sprinkle cinnamon and enjoy
