Hey y’all these lemon blondies have become a spring go-to recipe in my house! They are super easy to make and require minimal cleanup. Who doesn’t love that. They take about 15-18 minutes to bake. They are super moist and soft!

Ingredients

  • Blondie:
  • * 8 tbsp unsalted butter, melted, slightly cooled
    * 1/2 cup sugar
    * 1/4 cup powder sugar
    * 2 eggs, room temp
    * 2 medium lemons, zested
    * 1 lemon, squeezed
    * 1 1/2 tsp vanilla extract
    * 1/2 tsp almond extract
    * 1 cup flour

  • Icing:
  • * 1 cup powder sugar
    * 1 tsp vanilla extract
    * 1 lemon, squeezed
    * 1 lemon, zested

Directions

  • Preheat oven to 350° F. Grease a lined 8×8 baking dish with parchment paper.
  • Pour melted butter and sugars in a medium bowl and whisk together.
  • Add eggs, lemon zest, lemon juice and extracts to bowl and whisk together.
  • Slowly add flour and fold into wet ingredients till fully incorporated.
  • Bake for 15-18 minutes. The edges will be slightly more cooked than the center. Do not over bake. Remove from oven and let cool for 30 minutes.
  • Make glaze by combining powder sugar, lemon juice, vanilla extract and lemon zest. Pour over cool blondies, let it set and enjoy.
