No Bake Funfetti Mini Cheesecake

Ingredients
- Graham Cracker Crust
*2 cup graham cracker crumbs
*1 stick unsalted butter, melted- Funfetti Cheesecake
*12 oz. Cream cheese @phillyaus @phillycreamchs
*1/2 cup of sugar
*1 cup yellow cake mix @bettycrocker
*1 8oz. Tub cool whip
*1/3 cup rainbow sprinkles- Whip cream
*1/3 cup powder sugar
*1/2 tsp vanilla extract
*1/2 pint of heavy whipping cream
Directions
- Beat cream-cheese for 2 minutes till smooth, with a hand held mixer or stand-paddle mixer. Add sugar and beat till combine. Add 1/2 cup of the yellow cake mix at a time to the cream-cheese mixture, till fully combined and set aside.
- Melt butter in intervals of 15 seconds to start to make graham cracker crust. Takes about 1 minute. Add melted butter in a medium bowl to graham cracker crumbs and stir.
- Press the crust into your cupcake holders in your cupcake pan. Fill a little less then half way. Put graham cracker crust in fridge to firm up.
- While crust firms up, slowly spatula in cool whip into cream-cheese mixture and beat for another 3-5 minutes. Add rainbow sprinkles and beat for another minute till combine and smooth.
- Spoon funfetti cream-cheese mix into cupcake holders and let sit in fridge for at-least 4 hrs. to set.
- When ready make your homemade whip-cream. Combine powder sugar, vanilla extract and heavy whipping cream and whip for about 2-3 minutes.
- Top off the Mini Funfetti Cheesecakes with whip cream and sprinkles. Enjoy!!
