These Pumpkin Crumb muffins are so tasty and easy to make! You only need one bowl. The Bakery Style Muffin is moist and made with Botticelli baking olive oil vs. a butter or vegetable oil. They are an explosion of Fall in your mouth. Full recipe below.

Ingredients

  • Muffin Batter:
  • * 1 1/2 cup flour
    * 2 tsp pumpkin pie spice
    * 1 tsp baking powder
    * 1 tsp baking soda
    * 1/4 tsp salt
    * 1/4 cup whole milk 
    * 1/2 cup Botticelli Baking Olive Oil
    * 2 eggs
    * 1/2 cup pumpkin puree 
    * 1/2 cup light brown sugar 

  • Crumb Topping:
  • * 1/2 cup flour
    * 1/2 cup dark brown sugar
    * 5 tbsp unsalted butter, melted

  • Icing:
  • * 1/2 cup powder sugar
    * 2 tbsp milk

Directions

  • Preheat the oven to 375°F. Grease jumbo muffin pan. This makes 6 large muffins.
  • In a large bowl, combine all dry ingredients and whisk together. In the same bowl add milk, olive oil, eggs, pumpkin puree and brown sugar. Combine together.     
  • Add pumpkin batter to jumbo muffin pan. Make Crumb topping by combining flour, brown sugar and melted butter. Sprinkle over muffins, reserving half.
  • Bake muffins for 10 minutes and add remaining crumb topping. Bake for 8-10 more minutes. Total of 18-20 minutes of baking. While muffins cool make icing. Combine powder sugar and milk and stir. Add to pippin bag and drizzle. The Link for Botticelli Baking Olive Oil is below for purchase.
