Pecan Pie Bars

Ingredients
- For the Crust
1 cup unsalted butter, softened
1/3 cup light brown sugar
1/3 cup dark brown sugar
2 2/3 cup all-purpose flour
1/2 tsp salt
- Pecan Pie Filling
1/2 cup unsalted butter
1/2 cup dark brown sugar
1/2 cup light brown sugar
1/3 cup honey
2 tbsp heavy cream
1 tsp vanilla extract
2 1/3 cup pecans (2 medium size bags of pecans)
Directions
- Preheat oven to 350 degrees F. Line a glass or ceramic baking dish (9×13 preferred) with parchment paper. Parchment paper can hang over edges of dish.
- Make the crust by creaming together the butter and brown sugar with a mixer (hand or standing). Add flour and salt and mix till crumbly.
- Press crust mix firmly in the 9×13 dish and bake for 20 minutes till golden brown.
- While crust is baking, make your filling! Combine in a medium saucepan the butter, brown sugar, honey, heavy cream and vanilla extract. Stir at medium heat for about 2 minutes and combine in the chopped pecans. Stir pecans into filling for about 1 additional minute till pecans are covered and nice and gooey.
- Take crust out of the oven and pour pecan filling into dish evenly.
- Bake for an additional 20 minutes and remove from oven to cool. Cool for 1 hour before cutting into square bars. Enjoy!
Notes
- Recipe slightly adjusted from the Recipe Critic.
- Ensure to constantly stir the pecan filling so it does not burn.
- Do not over cook your pie crust the first time you bake it. It still will bake for 20 minutes once pecan pie filling is added.
