These chocolate chip ganache cookie sandwiches are so good and easy to make! All you need is a sheet pan and heart shape cookie cutter and the ingredients below!

Ingredients

  • Cookie:
  • * 1 cup unsalted butter, melted
    * 1/2 cup granulated sugar
    * 1 1/4 cup packed brown sugar
    * 2 large eggs, room temp
    * 1 1/2 tsp pure vanilla extract
    * 3 cups all-purpose flour
    * 1 tsp baking soda
    * 1/2 tsp salt
    * 1 cup mini chocolate chips, separated

  • Ganache:
  • * 2, 4 oz, chocolate bars, chopped
    * 1/2 cup heavy cream, heated

Directions

  • Preheat oven to 350°F.
  • Place melted butter in a medium bowl. Add both sugars and mix on low speed till smooth. Mix in eggs and vanilla extract till combine. Mix flour, baking soda and salt salt together and slowly mix in flour, 1/2 cup at a time. Mix in 3/4 cup chocolate chips.
  • Using an ice-cream scooper place dough on to parchment cookie sheet and sprinkle remaining chocolate chips on top. Set aside.
  • Make the ganache by pouring hot heavy cream over chopped chocolate and stir till smooth. Let it sit out to thicken or put in the fridge to thicken.
  • Put cookie sheet into the oven and bake for 20 minutes. Remove and cool. Once cooled using heart shape cookie cutter cut cookies out of sheet. We used a mini and medium @wiltoncakes heart sharped Cookie cutter. Place ganache into piping bag and pipe onto bottom of cookie and put another cookie on top. Enjoy!
