Strawberry Banana Breakfast Bars

- Crust and Crumble
*1 cup old-fashioned oats
* 3/4 cup all-purpose flour
* 1/2 cup dark brown sugar, packed
* 1/2 tsp salt
* 8 tbsp unsalted butter, melted
* 1 tsp vanilla extract- Filling
*2 cup diced fresh strawberries
*1 banana, sliced
* 2 tbsp sugar
* 1 tbsp lemon juice
* 2 tsp all-purpose flour
For the glaze:
* 1/2 cup powdered sugar
* 1 tbsp lemon juice
* Optional 1 tbsp heavy cream
Directions
- Preheat your oven to 350 degrees F. Line an 8×8 inch square pan with parchment paper (easiest method in my opinion) or grease the pan well, and set aside.
- Crust: In a large bowl, whisk together oats, flour, brown sugar, and salt. Stir in melted butter and vanilla until it’s a well-mixed crumble mixture. Set aside a little then half of the mixture; pour remaining into pan and press into an even flat layer with your hands. Set aside while you prepare the filling.
- Filling: In a medium bowl, toss strawberries, bananas, sugar, lemon juice, and flour until strawberries are completely and evenly coated. Pour mixture over top of crust and spread into an even layer.
- Crumble: Sprinkle the remaining crumble mixture over top of the strawberries and bananas as evenly as you can, and press down! Bake for 30-35 minutes, until crumble and crust are golden and fruit is slightly bubbling. Let cool completely. We leave out for 30 minutes and then put into the fridge for a few hours before cutting! Once cooled we combined all glaze ingredients together and drizzle on top of the bars. Enjoy!
