minutesPecan Pie Bars are my favorite to make! The cinnamon shortbread crust is delicious and a nice pairing with the pecan pie filling. Optional but you can top it off with ice-cream or whip cream if desired! We love eating ours as is during the day and then at night adding the works!
Ingredients
- Cinnamon Shortbread Crust:
* 2 sticks unsalted butter, softened (1 cup)
* 3/4 cup light brown sugar
* 2 1/2 cup flour
* 1 tbsp cinnamon
* 1 tsp salt- Pecan Pie Filling:
* 1 stick unsalted butter (1/2 cup)
* 1 cup light brown sugar
* 1/3 cup honey
* 3 tbsp heavy cream
* 1 tsp vanilla
* 2 1/4 cup chopped pecans- Optional Topping:
* Whip cream
* Vanilla Ice cream
Directions
- Preheat oven to 350 degrees F.
- In a large mixing bowl cream together butter and brown sugar. Add in flour, cinnamon and salt and beat till it’s a crumble texture. In a 9×9 baking dish lined with parchment paper press down shortbread crust evenly and bake for 15 minutes. When crust is done baking remove and set aside.
- While shortbread crust is baking make pecan pie filling. Melt butter in a medium saucepan or skillet, add in brown sugar, honey, heavy cream, and vanilla extract. Stir for a couple minutes on medium heat and add in the chopped pecans. Stir for another minute and pour pecan pie filling over baked crust. Put back in oven for another 15-20 minutes to finish off.
- Remove from oven and let cool for about 45 minutes. Slice and enjoy!
