Banana Cinnamon Crumb Muffins

minutesThese banana cinnamon crumb muffins are so soft and moist! They take 25 minutes to bake and do not require a stand mixer. The maple glaze tops them off. This is my new favorite muffin! Try only eating one!
Ingredients
- Cinnamon Crumb:
* 8 tbsp unsalted butter, melted
* 1 1/4 cup all-purpose flour
* 3/4 cup light brown sugar
* 2 tbsp cinnamon- Banana Muffin:
* 12 tbsp unsalted butter, melted
* 1/4 cup granulated sugar
* 1/2 cup light brown sugar
* 2 eggs, room temp
* 1 1/2 tsp vanilla extract
* 3 ripe bananas, mashed
* 1 3/4 cup all- purpose flour
* 1 tsp baking soda
* 1/4 tsp salt- Maple Glaze:
* 1/2 cup powder sugar
* 2 tbsp pure maple syrup
* 2 tbsp heavy cream
Directions
- Preheat oven to 350° F. * Grease 10 cups of a 12 cup muffin pan. This recipe makes 10 large muffins.
- Make crumb: In a medium bowl add flour, brown sugar, cinnamon and melted butter. Combine with a fork. Set aside.
- * Make muffin: combine melted butter and sugars and beat with a hand mixer for two minutes till combined. Add egg and vanilla and continue to beat for two minutes. Add mash bananas and mix for one minute. Slowly incorporate dry ingredients till fully combined. Using a small ice-cream scooper pour first layer of batter into muffin pan. Sprinkle on a layer of crumb and layer with more batter and then more crumb. Bake for 25-27 minutes till golden brown.
- Make Glaze: while baking, make glaze by combining powder sugar, maple syrup and heavy cream in a small bowl, stir till smooth. Take muffins out of oven and let cool for five minutes and transfer to cooling rack. Let sit for additional five minutes and pipe on glaze!
