This Gingerbread crumb cake is super moist! Its perfect for the holiday season. The crumb and drizzle is my favorite part.

Ingredients

  • Cake:
  • * 8 tbsp unsalted butter, softened
    * 1/2 cup granulated sugar
    * 1/4 cup dark brown sugar
    * 1 large egg
    * 3/4 cup unsulphered molasses
    * 2 1/2 cup all purpose flour
    * 1 1/2 tsp baking soda
    * 1 tsp cinnamon
    * 1/2 tsp nutmeg
    * 1/2 tsp ground ginger
    * 1/2 tsp ground cloves
    * 1/4 tsp salt
    * 2 tbsp unsweetened apple sauce
    * 1 cup hot water

  • Crumb:
  • * 2 cup flour
    * 1 cup dark brown sugar
    * 1/2 cup granulated sugar
    * 1 tbsp cinnamon
    * 12 tbsp unsalted butter, melted

  • Icing:
  • * 1 cup powder sugar
    * 2-3 tbsp heavy cream

Directions

  • Preheat oven to 350 degrees F. Grease and line a 9×13 baking dish with parchment paper.
  • Using a stand mixer in a large bowl combine butter and sugars. Beat together for two minutes.
    Add in egg and molasses. Combine. In a medium bowl combine all dry ingredients together and beat together.
  • Add apple sauce and hot water to mixture and continue to beat till smooth. Pour cake mix into prepared dish and bake for 30-35 minutes. If you are using a smaller baking dish I advise baking it for 45 minutes.
  • While cake is baking make crumb by combining flour, sugars, cinnamon and melted butter. Combine with fork till crumbs form. While cake cools make icing by combining powder sugar and heavy cream. Pipe on cooled cake. Slice and enjoy.
