Hot Chocolate Cupcakes

minutesThese Cupcakes are super moist and easy to make! We use the Hershey Cupcake recipe, it is our favorite. We level it up with a ganache center and marshmallow frosting. These are perfect to bring to a holiday party or event.
Ingredients
- Cupcake:
- Ganache:
* 1 1/2 cup Ghirardelli chocolate chips
* 3/4 cup heavy cream- Marshmallow fluff:
* 4eggs whites
* 3/4 cup sugar
* 1/4 tsp cream of tartar
* 1 tsp vanilla extract- Garnish:
* Crushed candy canes
Directions
- Heat oven to 350° F. Line cupcake pan with baking cups. * Combine dry cupcake ingredients in a bowl.
Add wet ingredients, minus the boiling water. Mix for 2-3 minutes till wet and dry ingredients are combine. Use hand held or stand mixer. Add boiling water and stir together. Fill muffin cups 3/4 full. Bake for 18-20 minutes. Place on cooling rack. - While cupcakes cool completely make marshmallow frosting. Put 4 eggs whites in a mixing bowl, add sugar and cream tartar and stir for 2 minutes. Start a double boiler with about an inch of water and let simmer. Take bowl and place on your double boiler and stir constantly till mixture is at 160 degrees F. Beat mixture till stiff peaks form, about 3-5 minutes, add in vanilla extract and beat for another 2 minutes. Put in piping bag.
- Make ganache by boiling milk and pouring over chocolate chips. Stir till it thickens. Place in piping bag.
- Once cupcakes are cool, scoop out a cavity in the center of the cupcake and pipe in the ganache. Pipe frosting on top and sprinkle crushed candy canes. For decoration we add a candy cane on the side of the cupcake and a little straw. Drink up!
